7. Blueberry Muffins

Ingredient

225g plain flour

1 tsp bicarbonate of soda

1/4 tsp salt

1 tsp mixed spices

155g caster sugar

3 egg whites

3 tbsp low fat margarine

150ml low fat natural yogurt

1tsp vanilla essence

85g blueberries

 

Method

1) Preheat the oven to 190 degrees celsius.  

2) Sift the flour, bicarbonate of soda, salt and  half the mixed spice into a large bowl. Add 6 tbsp of the caster sugar and mix.

3) In a sperate bowl, whisk the egg whites together. Add the margarine, yogurt and the vanilla essence and mix well.

4) Stir the blueberries in with egg white mixture.

5) Add the flour mixture to the egg white mixture and mix. It's okay if it's a bit lumpy.

6) Pour the mixture into a cupcake tray with cupcake cases in it.

7)Mix the remaining sugar and mixed spice and sprinkle over the mixture.

8) Bake in the preheated oven for 15 minutes.
