5. Iced Buns


4oz/110g butter

4oz/110g sugar

5oz/140g plain flour

2 eggs

1/4 teaspoon baking powder

1/4 teaspoon vanilla essence (optional, tastes just fine witout it)


For the icing:

(You can use the Buttercream Frosting from the last chapter or you can use the following icing recipe)

5oz/150g icing sugar

3 teaspoon boiling water

A dash of food colouring (optional)

A handful of sweets for decoration (optional)



1. Preheat the oven to 190*C.

2. Beat the sugar and butter together using an electric mixer until light and fluffy.

3. Beat the eggs and gradually add to the mix and add the vanilla.

4. Sieve the flour and baking powder into the mix and beat well with an electric mixer.

5. Spoon the cake mixture into bun cases in bun trays.

6. Bake for 7-10 minutes, until golden and firm to the touch. Place on a wire rack to cool.

7. While the buns are cooling, make the icing. (If you are using the buttercream frosting, stop here and go back to the last chapter.)

8. Sieve the sugar into a bowl and add the 3 teaspoons of water. Add a little more water to get a smooth consistency. Add a few drops of food colouring into the mix to make coloured icing.

9. Make sure that the buns are cool before spooning the icing on and levelling it off with a teaspoon or a palette knife. (To be honest, it doesnt matter if the icing is level or not, it's not going to affect the taste of the buns)
