1. Madeira Cake

Ingredients:

4oz/100g margarine

4oz/100g castor sugar

4oz/100g self-raising flour

2 eggs

 

Method:

1. Grease a cake tin with butter and line it with grease-proof paper.

2. Cream the margarine and castor sugar together until light and fluffy with an electric mixer or by hand with a whisk or spoon.

3. Beat the eggs together and slowly add them to the mixture, beating well after each addition.

4. Sieve the flour into the mix and fold in with a metal spoon. You can use the electric mixer for this aswell. (I like to use the electric mixer as it is easier on your arms than to use a spoon.)

5. Spoon the mixture into the cake tin and cook in the oven at 350*F or 180*C for about 20 minutes or until it is well risen, golden-brown and firm to the touch. (Sometimes it will take more than 20 minutes but to test it, stick a knife or a skewer into the cake. If it comes out dry, the cake is cooked)

6. Leave on a wire rack to cool for a few minutes and then get munching!!! :P

 

NIALL'S NOTE: The * after 350 and 180 is supposed to be the degrees sign. Sorry, I don't know how you do that on a computer. Could anyone tell me how you can do it?
