5. Fudge cheesecake
Most unbaked cheesecakes are set with gelatine, but because this ones so chocolately, it sets natrually to a lovely thick, fudge - like texture.
( To discard nuts make sure you have nut free chocolate digestives)
Preparation time : 15 minutes plus chilling
Cooking time : 5 minutes
You will need :
. 175g chocolate digestive biscuits
. 40g unsealed butter
. 300g cadburys Bournville chocolate broken into pieces
. 200g cream cheese
. 250g quark
. 150ml pint double cream
. 75g icing sugar
1. Line the side of a greased 20cm springform cake tin with grease proof paper. Put the biscuits in a polythene bag and crush them with a rolling pin. Melt the bitter on a saucepan and stir In the crushed biscuits until they are combined. Press the mixture into the base of the prepared tin.
2. Melt 275g of the chocolate. Beat the cream cheese with the quark to soften. Beat in the chocolate, cream and icing sugar until evenly combined. Turn the mixture into the tin and smooth the surface. Chill for atleast 3 hours until set.
3. To decorate,melt the remaining chocolate and put it in a piping bag fitted with a fine nozzle. Remove the cheese cake from the tin and transfer to a plate. Scribble lines of chocolate over the top.
4. Eat and enjoy!!!!
