A mini recipe book of MY favourite things! Mine and MINE only! Most will be baking, but there may be the odd bit of cooking in there...


2. Basic Cupcakes

This recipe is so simple, yet works every time! Decorate them however you want, whether you use glaze icing, or butter icing, or even make them into fairy cakes! Enjoy!



115g Self-raising flour, sifted

1/4tsp Baking powder

115g Butter, cut up and softened

115g Caster sugar

2 large eggs, lightly beaten



1. Preheat the oven to 180◦C, Gas mark 4 (160◦C for fan ovens). Line a bun tin with twelve paper cases.

2. Put the flour and baking powder in a large bowl. Add the butter sugar and eggs and whisk with a electric hand mixer until pale and fluffy.

3.Using a dessertspoon, spoon the cake batter into the cases, not filling them much more than halfway, but trying to use all the mixture in the bowl. But in the oven for 15-20 minutes, until golden and risen. Leave to cool a little, before moving to a cooling rack.

4. Decorate as desired.
